If you child is like mine, a staple of his diet includes cheese crackers. So this weekend I set to try out a recipe and make them from scratch. It was a hit! Not only did small child like the crackers, there were serious concerns that either myself or Mike was going to eat them all before small child had a chance to take them to school!!

In my 20s when I wanted to lose weight I could increase my activity, cut a few desserts and the weight would just fall off. Now that I am a mom in my mid-30s with a slowing metabolism and crazy busy lifestyle, I actually have to use the tips I have been giving others for years (that I know work!!!)

The Tomato Massacre of 2018

  • by Catherine Coccia Ph.D., R.D., LD/N
  • Posted on April 29, 2018April 29, 2018

Again I am reminded just how many life lessons gardening can teach us. Just like the tomato plants it is important to cut away damaging acquaintances, friends or even activities so that we can reach our true potential.

  • by Catherine Coccia Ph.D., R.D., LD/N
  • Posted on April 22, 2018April 22, 2018

The green beans in my garden are sketchy, ninja vegetables… Green beans grow on a bush or a vine – I have both types in my garden. Today we are discussing the bush green beans. They are the ones you should really look out for..

The Seedlings are Crawling

  • by Catherine Coccia Ph.D., R.D., LD/N
  • Posted on March 29, 2018March 29, 2018

Literally every day I am astounded by how different the garden looks and how much things have grown literally over night. Like a baby goldfish (or just a baby – the analogy has gotten away from me) I have been tracking the progress of the garden each week and documenting it via pictures. Again I am THAT mom (gardener?)…

Eggplants, Eggplants Everywhere!

  • by Catherine Coccia Ph.D., R.D., LD/N
  • Posted on March 22, 2018March 22, 2018

The eggplants in my garden have been a source of “gardening stress” for me since we moved into our new house. When we moved in the previous owner proudly showed me the flowing eggplant plants while proclaiming, “you will have fresh eggplants any day now!” So I excitedly waited for the eggplants to appear… I waited and waited and waited.

  • by Catherine Coccia Ph.D., R.D., LD/N
  • Posted on March 10, 2018March 10, 2018

This week’s Urban Vegetable Garden Community Supported Agriculture challenge food was sunflower microgreens. When Erin dropped them off, she compared the microgreens to the veal of vegetables because of their tantalizing flavor and vibrant color (plus they are baby plants).

How AI is being used in the food industry! Searching for our endless summer… @mikezourdos Yesterday I got the opportunity to watch my little brother @trumpetown live out one of his childhood dreams, playing for the American Ballet Theater (ABT) at Lincoln Center. Although he has now done it numerous times - it was my first time seeing him do it. The whole experience was surreal. @trumpetown - you live out your dream every day. You worked so hard for this. I can’t describe how proud I am of you. @alli_ruppe it was so great hanging out with you yesterday too and sharing this experience with you! Xxoo #proudsister Want your summer basil to actually last all summer long? Hoping for big bushy basil plants this year? The key to growing amazing basil is regular pruning! By regularly pruning your basil - you are preventing the plant from forming flowers. Flower formation prevents the plant from growing new leaves and from bushing out. By trimming the plant at the junction where the new leaves are forming - you can guarantee healthy long lasting bushy basil all summer long! Perfect for your summer pesto! Made some serious garden progress yesterday! 🪴 So excited for the finished flood-proof garden! Anyone else or just me?? 🙋‍♀️🙋‍♀️🙋‍♀️ And that is a wrap on the last event of the 2022-2023 @sfandeatright events!!! I am so thankful for the opportunity to work with these incredible dietitians on the board this year.
